Step 1 Preheat oven to 350. |

Step 2 Put flour in in shallow bowl and season cutlets on both sides with salt and pepper, then coat with flour. |

Step 3 Heat a large ovenproof saute pan over medium high and add 1 tbsp butter. |

Step 4 When the butter begins to brown, add the oil and then add the cutlets. |
|
Step 5 Cook, turning once, until golden (3-4 min per side). |

Step 6 Transfer pan to oven to finish, about 5 min. |

Step 7 Place clean pan over medium high heat and add 1 tbsp of butter. |
|
Step 8 When butter begins to brown, add the prosciutto and chopped sage, saute until cooked 2 min. |
|
Step 9 Add the wine, bring to a boil, stir and boil for 1-2 minutes to reduce slightly. |
|
Step 10 Swirl in the remaining 2 tbsp of butter off the heat and season to taste. |
|
Step 11 Spoon sauce over cutlets and serve. |
