Turkey Saltimbocca
Turkey, sage, and prosciutto

[Serves 2/3]
1/2 cup flour 6 turkey cutlets - about 1/4 lb each, no more than 0.5 in thick
kosher salt and freshly ground pepper 4 tbsp butter
1 tbsp olive oil 1/4 lb prosciutto
2 tbsp chopped sage 1/2 cup dry white wine

Method Step 1 Preheat oven to 350.
Step 2 Put flour in in shallow bowl and season cutlets on both sides with salt and pepper, then coat with flour.
Step 3 Heat a large ovenproof saute pan over medium high and add 1 tbsp butter.
Step 4 When the butter begins to brown, add the oil and then add the cutlets.
Step 5 Cook, turning once, until golden (3-4 min per side).
Step 6 Transfer pan to oven to finish, about 5 min.
Step 7 Place clean pan over medium high heat and add 1 tbsp of butter.
Step 8 When butter begins to brown, add the prosciutto and chopped sage, saute until cooked 2 min.
Step 9 Add the wine, bring to a boil, stir and boil for 1-2 minutes to reduce slightly.
Step 10 Swirl in the remaining 2 tbsp of butter off the heat and season to taste.
Step 11 Spoon sauce over cutlets and serve.
