Tofu and Edamame
Vegan!

[Serves 2/3]
1 box firm tofu Frozen shelled edamame (12 oz ?)
Soy Vay marinade and sauce teriyaki Peanut oil OR Canola oil
Rice

Method Step 1 Drain tofu and then cut into bite size squares. Heat ~2 TBSP oil in a pan on med-high heat. Add the tofu squares and stir fry until a bit crisp on the outside.
Step 2 In parallel, place 2+ cups of shelled edamame in a glass bowl. Cover with some water. Microwave for 2 to 3 minutes. Drain.
Step 3 Once the tofu is heated and at your desired crispness, turn heat to medium. Pour in some Teriyaki marinade. Add the drained edamame. Continue to stir to coat tofu and beans. Add more sauce or water as needed.
Step 4 Serve with cooked rice.
