Stir-fried Vegetables with Chiles and Sichuan Pepper
Vegan!

[Serves 2]
1 1/2 lb cabbage (or broccoli) Peanut oil
6 dried chiles, preferably Sichuhanese 1 tsp whole Sichuan peppercorns
Salt 1/2 tsp sugar
1 to 2 tsp sesame oil Chinkiang vinegar

Method Step 1a Cut up cabbage into 1/2 to 1 inch slices.
Step 1b Cut broccoli into florets and blanch in water for 1 to 2 minutes and drain.
Step 2 Season the wok, then add 2 TBSP of oil and wirl it around a medium flame till hot but not smoking.
Step 3 Add the chiles and Sichuan pepper and stir-fry briefly until the oil is fragrant and spicy.
Step 4 Add the vegetable, turn up the heat and stir fry vigorously for about 4-5 minutes, seasoning with salt and sugar.
Step 5 When the vegetables are cooked, remove from the heat, stir in the seasme oil and serve.
Suggestions Add some chinkiang vinegar right before serving for extra flavor
