Penne alla Vodka
Pasta with vodka sauce

from Salt & Lavender

[Serves 4]
8 oz penne pasta 1 tbsp olive oil
2 tbsp butter 1/2 finely chopped small onion
1 clove minced garlic 1/4 cup vodka
1/4 cup tomato paste (tube is best) 3/4 cup heavy cream
Salt and pepper to taste Fresh basil, sliced thin (optional)
Freshly grated parmesan cheese (optional) 4 pack of sliced sausages (optional, spicy is better)

Method Step 1 Cook pasta in the background.
Step 2 Add oil and saute sausages.
Step 3 Remove sausages but keep any oils. Add butter and oil over medium heat and saute onion for 5 minutes or until softened.
Step 4 Stir in the garlic and cook for 30 seconds.
Step 5 Add vodka and let the sauce bubble for 30 seconds.
Step 6 Stir in the cream and reduce heat to medium-low. Let sauce thicken.
Step 7 Season with salt & pepper as needed. Stir in the fresh basil if using. Add pasta and parmesan.
Suggestions The original recipe doesn't call for sausage
