Gochujang Buttered Noodles

[Serves 3/4]
1 lb spaghetti 6 tbsp butter
12 garlic cloves (1/3 cup) Salt and pepper
1/4 cup gochujang paste 1/4 cup honey
1/4 cup rice vinegar

Method Step 1 Cook spaghetti and save 1 cup of cooking water.
Step 2 Melt 4 tbsp of butter over medium low. Add the garlic and season with salt. Cook, stirring occasionally, until the garlic starts to soften but not brown, 1 to 3 minutes.
Step 3 Stir in the gochujan, honey, and vinegar. Bring to a simmer over medium-high. Cook, stirring constantly, until the mixture reduces significantly, 3 to 4 minutes; when you drag a spatula across the bottom of the pan it should leave behind a trail that stays put for about 3 seconds. Remove from heat.
Step 4 Add sauce to the spaghetti along with 2 more tbsp of butter. Thin with cooking water if needed, add salt and pepper / scallions.
Suggestions You can add sausage to this for some protein
