Garlic Pork
with white pepper

[Serves 4]
8 oz boneless lean pork 2 tablespoons minced or pressed garlic
1 teaspoon white pepper 3 tbsp fish sauce
2 tbsp oyster sauce 1 tbsp sugar
2 tbsp canola oil 1/4 cup chopped shallot

Method Step 1 Rinse pork under cold running water and pat dry with paper toweling.
Step 2 Slice pork across the grain as thinly as possible, then cut each slice into pieces about 2 inches long by 1/2 inch wide.
Step 3 In a bowl, combine pork, garlic, and pepper. Cover tightly and referigerate for at least 1 hour.
Step 4 Combine fish sauce, oyster sauce, and sugar.
Step 5 Put a wok over high heat. Add oil and swirl to coat the pan. When oil is hot, add the shallot and stir-fry for 1 minute.
Step 6 Add the pork mixture and stir-fry for about 2 minutes.
Step 7 Add the sauce mixture and cook until the meat is well coated and the liquid thickens slightly, about 1 minute longer.
