| 3 sichuanese dried chiles, snipped in half, seeds discarded | 1/2 teaspoon whole sichuan pepper | |
| 2 tbsp Sichuanese ya cai | 2 teaspoons light soy sauce | |
| 4 oz ground beef | 1/2 - 1 teaspoon ground sichuan pepper | |
| 1/4 teaspoon salt | 6 tsp sesame paste | |
| 1 tbsp light soy sauce | 1 tbsp dark soy sauce | |
| 1 to 2 tbsp chili oil |
| Method | Step 1 Heat peanut oil in wok over medium. When oil is hot, add chiles and sichuan pepper and fry until oil is spicy and fragrant. |
| Step 2 Add the ya cai and continue until hot and fragrant. | |
| Step 3 Add the meat and splash soy sauce and stir-fry until the meat is a little crispy. | |
| Step 4 Mix sauce ingredients (ground sichuan pepper, salt, sesame paste, light and dark soy sauce, and chili oil). | |
| Step 5 Cook noodles. | |
| Step 6 Mix all. |
