[Serves 4]
1 lb of fresh noodles or 12 oz dried 1 tbsp peanut oil
3 sichuanese dried chiles, snipped in half, seeds discarded 1/2 teaspoon whole sichuan pepper
2 tbsp Sichuanese ya cai 2 teaspoons light soy sauce
4 oz ground beef 1/2 - 1 teaspoon ground sichuan pepper
1/4 teaspoon salt 6 tsp sesame paste
1 tbsp light soy sauce 1 tbsp dark soy sauce
1 to 2 tbsp chili oil

Method Step 1 Heat peanut oil in wok over medium. When oil is hot, add chiles and sichuan pepper and fry until oil is spicy and fragrant.
Step 2 Add the ya cai and continue until hot and fragrant.
Step 3 Add the meat and splash soy sauce and stir-fry until the meat is a little crispy.
Step 4 Mix sauce ingredients (ground sichuan pepper, salt, sesame paste, light and dark soy sauce, and chili oil).
Step 5 Cook noodles.
Step 6 Mix all.
Suggestions You can go up to a pound of ground meat. You can also serve with bokchoy. You can also try keeping the seeds from the chili peppers
